What is Sous Vide, or, at least, what is the big deal? Sous Vide offers several desirable features. It tenderizes meat, without diluting or destroying its nutritional qualities. It actually improves the flavor of food. And, it pasteurizes food, thereby extending shelf life. Top Chefs have been incorporating it into their recipes since the 70’s.
