Leftovers are a hard sell to the kids. But if you transform it, they will eat. this sage fried egg with pan fried egg doodles recipe nailed it.

We had leftover egg noodles – really great Polish/Amish Kluski egg noodles coated with butter. I pan-fried them until a bit crispy. Meanwhile I melted a pat of butter in a pan and arranged fresh sage leaves a circle. Then I cooked them until crispy – about three minutes. From there you just break an egg carefully over the top of the leaves and cook about a minute. Season the egg with salt and pepper and flip. Cook the egg to your desired doneness. But a really runny yolk works the best. Best fried egg ever.

Top the egg noodles with the egg and eat.

This kind of dish works with about any kind of fried pasta and herb. Give it a try and let me know if the yolk isn’t the best pasta sauce ever.

The noodles I used seem to be of Polish decent and an Amish staple. when shopping, look for kluski egg noodles.
